Seafood Chilupas

4 Coho Salmon Fillet Portions
12 Flour Tortillas
1 can Cream of Chicken Soup
1 can Cream of Celery Soup
1 small Sour Cream
1 can Diced Green Chiles
2/3 cup Milk
1 med Onion, finely chopped
1 tsp Tarragon
12 oz Grated Cheddar Cheese

Bake Coho Salmon fillet portions and remove skin. Break into small, pieces. Cut tortillas into quarters.
In a bowl mix/combine all remaining ingredients (except cheese). Spray 13 x 9 baking dish with cooking spray. Layer tortillas, fish, sauce and cheese; repeat ending top layer with cheese. Cover with foil and bake at 350 for 45 minutes, remove foil and bake 15 more minutes.
