Pesto

3 cups Fresh Basil Leaves
½ cup Fresh Parsley
3 heads Garlic (to taste)
¾ cup Toasted Pine Nuts
1 cup Grated Parmesan Cheese
½ each Juice of Squeezed Lemon
½ cup Extra Virgin Olive Oil

  1. Place ingredients (except olive oil and parmesan cheese) in the bowl of a food processor equipped with a steel blade.
  2. Slowly add only enough oil to bind ingredients.
  3. Process until nuts are finely chopped but not pureed.
  4. Add parmesan cheese and process until just combined.
  5. Season with freshly ground black pepper and salt to taste.
