Baked Pesto Vegetables
5 large Potatoes, cut large
4 large Red Beets, cut large
3 large Onions, cut large
8 large Carrots, cut large
2 Garlic Heads, skin removed
¾ tbsp. Garlic or Onion Salt (or to taste)
6 oz. homemade or Contadina Pesto
1 tbsp. Olive Oil
- Combine all ingredients in a large baking pan.
- Work all ingredients together to ensure complete coating.
- Cover pan with foil and bake at 400 degrees for 15 minutes.
- Remove cover, stir around, recover and bake for 15-20 more minutes.
