Baked Pesto Vegetables

5 large Potatoes, cut large
4 large Red Beets, cut large
3 large Onions, cut large
8 large Carrots, cut large
2 Garlic Heads, skin removed
¾ tbsp. Garlic or Onion Salt (or to taste)
6 oz. homemade or Contadina Pesto
1 tbsp. Olive Oil

  1. Combine all ingredients in a large baking pan.
  2. Work all ingredients together to ensure complete coating.
  3. Cover pan with foil and bake at 400 degrees for 15 minutes.
  4. Remove cover, stir around, recover and bake for 15-20 more minutes.
