Smoked Salmon/Seafood Quesadillas

3-8 ounces Smoked Wild King or Coho Salmon, Shrimp, Halibut, or Regular Salmon
1 can (small) Green Chili’s, diced
8 ounces Cream Cheese
Mild Salsa
Tarragon (optional)
Chopped Onions (optional)
1 pkg. large Flour Tortillas

  1. Preheat large skillet over medium heat.
  2. Spread light layer of cream cheese over two tortillas.
  3. Cut smoked salmon into small pieces and place onto one tortilla. ON the same tortilla, sprinkle diced chilies and a little salsa and the tarragon and onion (optional).
  4. Put the tortilla with cream cheese down onto the ingredients and lightly press together.
  5. Place onto the skillet long enough for any shell to start crisping then turn over and repeat.
  6. Cut into portions and serve with salsa.
